Since 2013, Bowery to Williamsburg (B2W) has combined the best of America in a refined style, and surroundings that Melbournians have come to expect. The classic New York City’s diner style joint is an homage to the NYC Bowery subway station.

We serve bagels from local supplier 5 and Dime, produced using the very traditional boil and bake method to ensure the best quality. Served with a range of schmears produced in-house from flavours like lemon vanilla to chipotle. Our menu features American favourites from bagels with schmear to pastrami on rye, or a classic Reuben if that’s more your style. The Good Morning Cubano sandwich comes with Cuban braised pork shoulder that is slow cooked overnight, a fried egg, pickles, mustard and Swiss cheese on Jewish challah bread, but if you really need to cut through the morning fug, try the beef brisket with fried eggs, white cheddar corn bread and chilli verde or the Southern Fried Chicken Waffle with spiced whipped butter, chipotle hot sauce and maple syrup.

B2W’s baristas can pump out espresso to match the busiest rush, or you can get a classic American style filter coffee brewed using Brunswick’s own Padre beans.

The venue can seat 60, with a large communal table inside and undercover cafeteria-style tables outside, as well as plenty of smaller cozy spots for something more private, whether it be for brunching, casual coffee sipping or for quickly scoffing a bagel before rushing off to your next destination. B2W is also available for your office catering needs.


Shaun Williams, Founder

Shaun Williams’ first foray into the food industry was through an apprenticeship at 16 years old starting at cafes and restaurants around Melbourne. A few years later, his passion for cooking led him to work on private yachts sailing around the world. Shaun learnt about various cooking styles and ingredients from different countries.

It was the American north east that he had set his eyes and palate on, with a desire to bring American-style NYC deli to the trendy cobblestone laneway in Melbourne. An initial partnership with long time friends and owners of The Hardware Societé launched B2W in 2013. After building together what has become a Melbourne icon, Shaun has since taken the reins and continues to push forward with the success of the business.

Consistency and attention to detail have been the key. Pushing the boundaries with flavours and ingredients but staying true to those traditional techniques have become it’s unique selling point.

On future plans of B2W’s direction, there could be opportunities of popups or new establishments for future but for now, it’s about maintaining the good quality of B2W and retaining a strong team, with key members like – long time Manager & Barista, Michelle Fraser and Head Chef, Ash.
